Healthbeat: Exploring the flavors of herbs
Getting tired of the same old foods and flavors? Why not experiment with the many flavors fresh herbs can add. This is an even better idea if you are trying to follow the current nutritional guideline of lowering your salt/sodium intake. Herbs can provide a mouthful of taste without the need for added salt.
If you are not familiar with herbs, take a look in your local grocery store, produce market, or farmers market. Take note of what is available. Some of the more common herbs are basil, rosemary, thyme, cilantro, oregano, marjoram, dill, parsley (curly and flat leaf) and mint. Many herbs can be used alone or in combination with other herbs or seasonings. Browse online or through the cookbooks you have for recipes using some of these herbs.
Basil is used in a number of Italian dishes. It is a foundation herb for many tomato sauces, pesto, and soups. It works well in both hot and cold pasta recipes. Top a pizza with fresh basil or slip it into a salad dressing. It can add the fresh taste of summer to a basic vegetable stir fry. It also makes a good companion to most other herbs.
Pesto, although usually made with basil, can be made with many other herbs as well. It can be stirred into hot or cold pasta, added to soups, or spread on whole grain bread and topped with fresh tomato. For a quick and easy pesto, combine the herb(s) of your choice, garlic, walnuts or almonds (cheaper than the traditional pine nuts), and a little grated Parmesan or Romano cheese in the food processor. Process while adding a stream of olive oil until it is the consistency you want.
Rosemary has a strong distinctive flavor that holds up to heavier flavored foods like beef, poultry, and lamb. Try using it in a marinade made with garlic, olive oil, and balsamic vinegar. Maybe couple it with some fresh mint if you are using the marinade for lamb. You can even use the stiffer stems of rosemary as skewers for vegetables and cook them on the grill.
Rosemary, as well as many of the other herbs listed above, is also delicious with roasted vegetables or vegetables cooked in a grill basket. Cut vegetables that have similar cooking times into bite-sized pieces. Toss with a little olive oil and then stir in some minced fresh rosemary (or other herbs). For oven roasting, place the herbed vegetables in a 9-inch by 13-inch pan or other pan with an edge. Bake at 350 degrees, stirring occasionally, until tender. Cooking time depends on the types of vegetables.

Black & Jack Quesadillas & Wicked Salsa
Serves 4
This one will certainly get their attention as well as their compliments - but be sure all your eaters like it hot. Just in case, let them add their own amount of hot sauce
Preheat the oven to 200°F.
Quesadillas
4 large whole wheat flour tortillas
1 cup low-fat Monterey jack cheese
1 15-oz can black beans, drained and rinsed
2 Tbsp chopped cilantro leaves
3/4 cup each chopped red onion & tomatoes
Wicked Salsa
1/2 cup chopped tomatoes
3 Tbsp chopped red onion
1 tsp minced jalapeño pepper, or to taste
3 Tbsp diced red or green peppers
1 tsp chopped fresh cilantro leaves
1 Tbsp fresh lime juice
salt to taste
freshly ground black pepper
2 or 3 dashes hot sauce, to taste (or none for tender eaters)
Lay the tortillas out and, in this order, lay on half of each tortilla the cheese, beans, cilantro, red onion and tomatoes. Fold the empty side over the loaded side.
If you have followed my previous advice and bought a huge electric griddle cook them all at once until browned on both sides. If you have ignored my sage advice heat a large non-stick skillet over medium heat and cook one at a time until browned on both sides placing each one in the warm oven while you finish the others.
Cut each quesadilla into 4 wedges and serve with the Wicked Salsa (Just mix all the salsa ingredients together) and sour cream.
